Foie Gras

Foie gras is the French term for "fatty liver", and the product of extreme animal cruelty. 24 million ducks and geese die in the foie gras industry every year, 500,000 of them in Canada. You can help stop this cruelty by writing or calling these businesses today.

In modern foie gras factory farms, these waterfowl are intensively raised in large, enclosed barns. All of the ducks are male; the female ducks are sometimes discarded after hatching because they do not grow as large as the males and because their livers contain more veins, depending on the hatchery or farm. Hudson Valley Foie Gras, for example, ships their females off to Trinidad to be raised for meat. There is extensive video documentation of female chicks being discarded in garbage cans at hatcheries.

For the last 2-3 weeks of their lives (which is approximately 3 months) the ducks are force-fed a mixture of corn and oil or corn and water. A machine is used to pump the mixture directly into their gullets. It looks a lot like pumping gas. Although foie gras farmers say that this does not harm the ducks, mortality rates on foie gras farms are 20 times that of ordinary duck farms. The ducks' livers swell up to 10 times normal size. On being transferred to slaughter, many of them can barely walk, or even breathe.

Here in Vancouver there are many restaurants that serve foie gras, ranging from high-end French restaurants to restaurants that otherwise try to serve only local and organic products. Foie gras is definitely not local, and there is no organic foie gras. So why are they serving it?


What you can do

Please contact the following Vancouver businesses and politely tell them that you will not patronize their establishment until they drop foie gras from the menu. Use this link to send an email to all of the establishments listed below that have an email address (using the BCC field). This will only send to the restaurants and shops that have listed email addresses.

Please note, menus at the restaurants rotate from time to time. All of the restaurants on the list either have served foie gras in the recent past or are currently serving foie gras. We will remove them from the list only when we receive confirmation that foie gras will be removed from all future menus.

Note (June 20, 2008): We confirmed with West that they are serving foie gras again, but concealing it by not listing it on their online menu. Since LBC confronted them with this, they have been lying to anyone calling to ask if they serve foie gras. West will remain on the "restaurants that serve foie gras" list until we have written confirmation that they will remove foie gras permanently. Until then, please keep calling and emailing them.
